KICK ASS KALE SALAD

INGREDIENTS

1 bunch of kale, shredded (discard the woody stems)
1 cup fresh diced organic tomatoes
1 large avocado, or two small
2-½ T extra virgin olive oil or unrefined sesame oil
1-½ T lemon juice
1 t Celtic sea salt or Himalayan salt
½ t cayenne pepper
Sprinkle of sesame seeds

PREPARATION INSTRUCTIONS

Roll up the kale like a cigar and slice into shreds. Using your hands, massage the salt into the kale for a few minutes until the kale softens. Toss the remaining ingredients in with the kale, and mix well with your hands, squeezing to cream the avocado. Enjoy!
